In recent years, there has been increasing concern about the safety of additives used to extend shelf-life food products. As a result, lycopene, natural phytochemical compound, attracted attention, as it demonstrated be potential alternative traditional artificial antioxidants, with significant health benefits when applied preservation. Based on this, this review introduces specific forms lycopene currently an antioxidant in foods, both its naturally occurring fruits and vegetables artificially added involving technologies such composite coating, active film packaging, emulsion, microcapsules. addition, also provides comprehensive summary effects progress preservation different types products, meat, seafood, oil, dairy fruits, vegetables, last decade. At last, points out limitations including insolubility water, dark color, high sensitivity heat or light, well solutions load suitable carriers, combining antimicrobial substances other actives, order broaden applications future foods.
